You can call a specialized insurance company, like Haggerty, and get stated value insurance. They basically insure it at whatever you state its value to be, but may require an appraisal... but then there are limits on how much you can drive the car... like 2500 miles a year, only to and from events, shows, etc, or maintenance runs (i.e. weekly drive around the block, to the shop, etc). Other option is to have your insurance do a stated value/appraised value, but you still have to have it appraised. So basically, you have to finish all the work on the car, have it appraised, and then get it insured for the amount you want. Best luck!
